After-Eight-Minigugl {Ich back's mir}

Do you still remember last year's miniature Bundt cake craze? For a while, those little cakes were everywhere on all kind of blogs :) ... I was infected with it, too, and took out my miniature Bundt cake pan I had owned for a while. They are just so sweet and tiny and thanks to their size, they don't need a lot of ingredients, so they're easy to bake when there isn't a lot in the pantry. Nevertheless, there's only one miniature Bundt cake recipe on my blog so far - that needs to be changed!

So I used the opportunity of the blog project by Clara of Tastesheriff. Similar to Ina of Whatinaloves who's got the blog project "Let's cook together", Clara's blog project is called "Ich back's mir" (roughly translating to I am baking it the way I like it). And this month's topic is Bundt cakes. Luckily she didn't specify which size they need to be ;).

These mini Bundt cakes were quite an experiment - originally I had wanted to do a tested and tried recipe for chocolate coconut Bundt cakes to bring some to my parents but then I thought it would be nice to have a few left over for a friend who spent Tuesday evening with us. But he doesn't like coconut ... So I just turned the recipe into After Eight Bundt cakes using the peppermint flavour I had in my baking drawer. But I had misjudged how strong the flavour is, and when the batter first tasted like toothpaste, I had to double the recipe and finally ended with four times the batter (!). We still managed to eat them all :). So please be very careful with the peppermint flavour!

Unfortunately, I ended up having the same problem I had wanted to avoid by changing the recipe up: My mama doesn't like After Eight, and so she wasn't a fan of those. She ate a few and found them okay but she'd have preferred coconut. Damned if you do, damned if you don't :) ...

After-Eight-Minigugl
(für 15 Stück)

Zutaten:
30 g Puderzucker
35 g Butter
1 Ei
50 g Mehl
1 Prise Salz
60 ml Milch
1 TL Kakaopulver
1 Tropfen Pfefferminzaroma

Miniature After Eight Bundt cakes
(15 pieces)

Ingredients:
30 g confectioner's sugar
35 g butter
1 egg
50 g flour
1 pinch of salt
60 ml milk
1 tea spoon cocoa powder
1 drop of peppermint flavour
100 g plain chocolate

Preheat the oven to 175°C. Using a handheld mixer or kitchen machine, beat together all ingredients apart from the chocolate. Fill the batter into the miniature Bundt cake pan. It works best when you fill it into a freezer bag and cut off a corner. Then "pipe" the batter into the pan.

Bake for approx. 20 minutes. Take out of the oven, let cool and release the Bundt cakes from the pan. In the meantime, chop the chocolate and melt it in a double boiler. Cover the Bundt cakes with chocolate (my experience was that it worked best first dipping them into the chocolate and then taking off some of the excess chocolate with a pastry brush). Let the chocolate set. That's all - enjoy!

The new year is already almost three weeks old by now, all the end-of-the-year and happy-new-year posts are gone - it's time to spend some time on thinking about what 2014 will bring, isn't it? Bine (Was Eigenes) and Andrea (Jolijou) have started a new project this year, Short Stories, in which the focus should be more on writing than on posting lots of pretty pictures. And since I'm a much better writer than photographer (or so I think), that's just right up my alley ;).

I'm of two minds about this whole resolutions business - and do I imagine that or is that a rather new trend which has only started to spread the last few years or so? In any case, I'm very bad in making resolutions - or rather, I make a lot of them but they don't live long. As soon as I get the feeling that I haven't done enough for my resolutions for a while, I quickly get into a "oh, why even bother" mood, and that's that. And the new year as the time for the resolution to change something is rather random, too, when you think about it. The best time for it actually is ... now.

So I don't really want to make really hard and fast resolutions or set any big goals, neither at the new year nor in general. Rather, my resolution is a wish: I want to do more things that make me happy.

That's something I always try to do, sure. But I want to have a look at what I do and whether it really makes me happy more often. There are so many things I'm doing because I'm used to it, because it's a habit, because I don't want to disappoint others, because I feel like I should. And that's kind of sad - I want to do things I really enjoy. Of course, you cannot totally stop doing things you don't love (I can't afford rejecting every job at work that I don't enjoy - my bosses would not be happy!), but you still can try and think about whether there isn't another way or if it's worth it. That's what I want to do more often now, and I want to have the courage to say no more often, to others but also to myself. Because quite often, I'm the only one expecting me to do all this stuff ...

There are many more small things I want to do but I think this motto summarises them well since they are all things I hope will make me happy. So I'll leave it at that and hope that this wish will not only accompany me through 2014 but beyond.

Did you make any resolutions for 2014, too? Or do you think this resolution business is totally overrated?
