After-Eight-Minigugl {Ich back's mir}

Do you still remember last year's miniature Bundt cake craze? For a while, those little cakes were everywhere on all kind of blogs :) ... I was infected with it, too, and took out my miniature Bundt cake pan I had owned for a while. They are just so sweet and tiny and thanks to their size, they don't need a lot of ingredients, so they're easy to bake when there isn't a lot in the pantry. Nevertheless, there's only one miniature Bundt cake recipe on my blog so far - that needs to be changed!

So I used the opportunity of the blog project by Clara of Tastesheriff. Similar to Ina of Whatinaloves who's got the blog project "Let's cook together", Clara's blog project is called "Ich back's mir" (roughly translating to I am baking it the way I like it). And this month's topic is Bundt cakes. Luckily she didn't specify which size they need to be ;).

These mini Bundt cakes were quite an experiment - originally I had wanted to do a tested and tried recipe for chocolate coconut Bundt cakes to bring some to my parents but then I thought it would be nice to have a few left over for a friend who spent Tuesday evening with us. But he doesn't like coconut ... So I just turned the recipe into After Eight Bundt cakes using the peppermint flavour I had in my baking drawer. But I had misjudged how strong the flavour is, and when the batter first tasted like toothpaste, I had to double the recipe and finally ended with four times the batter (!). We still managed to eat them all :). So please be very careful with the peppermint flavour!

Unfortunately, I ended up having the same problem I had wanted to avoid by changing the recipe up: My mama doesn't like After Eight, and so she wasn't a fan of those. She ate a few and found them okay but she'd have preferred coconut. Damned if you do, damned if you don't :) ...

After-Eight-Minigugl
(für 15 Stück)

Zutaten:
30 g Puderzucker
35 g Butter
1 Ei
50 g Mehl
1 Prise Salz
60 ml Milch
1 TL Kakaopulver
1 Tropfen Pfefferminzaroma

Miniature After Eight Bundt cakes
(15 pieces)

Ingredients:
30 g confectioner's sugar
35 g butter
1 egg
50 g flour
1 pinch of salt
60 ml milk
1 tea spoon cocoa powder
1 drop of peppermint flavour
100 g plain chocolate

Preheat the oven to 175°C. Using a handheld mixer or kitchen machine, beat together all ingredients apart from the chocolate. Fill the batter into the miniature Bundt cake pan. It works best when you fill it into a freezer bag and cut off a corner. Then "pipe" the batter into the pan.

Bake for approx. 20 minutes. Take out of the oven, let cool and release the Bundt cakes from the pan. In the meantime, chop the chocolate and melt it in a double boiler. Cover the Bundt cakes with chocolate (my experience was that it worked best first dipping them into the chocolate and then taking off some of the excess chocolate with a pastry brush). Let the chocolate set. That's all - enjoy!

[Let them eat cake] Zitronen-Cashew-Gugl

Zitronen-Cashew-Gugl1-vert

Yesterday I did some baking again. And this is it: My submission to Claudia's miniature Bundt cake contest :)! (German only, sorry!)

As you can read (if you speak German ;)) they are lemon cashew Bundt cakes - and I'm proud since I came up with the recipe almost all on my own. Therefore it had to survive some teething problems first, such as forgotten ingredients (*cough* they tasted good without butter, too, but the texture was really a bit weird ...). But I'm satisfied with the final result. I hope my taster will be, too!

Zitronen-Cashew-Gugl2-horz

Dieses Päckchen hat sie von mir bekommen. Hoffentlich kommt es bald und heil an!

I sent off this little package to her. I hope it arrives swiftly and safely!

Mini-Zitronen-Cashew-Gugl

Zutaten
35 g Puderzucker
1 Ei
55 g Mehl
1 Prise Salz
60 ml Milch
35 g Butter
20 g gehackte Cashewnüsse
1 TL geriebene Zitronenschale

Puderzucker
Zitronensaft

Miniature lemon cashew Bundt cakes

Ingredients
35 g powdered sugar
1 egg
55 g flour
1 pinch of salt
60 ml milk
35 g butter
20 g chopped cashew nuts
1 tea spoon ground lemon zest

powdered sugar
lemon juice

First beat sugar, egg and butter until fluffy, then add the rest of the ingredients. Fill the dough into a freezer bag and cut off a corner. Fill your miniature Bundt cake pan with it - but take care, the dough is rather thin!

Bake in your preheated oven at 180°C for about 15 minutes. Take them out and let them cool out completely before removing them from the pan.

Finally, make a sugar glaze from powdered sugar and lemon juice and either cover the Bundt cakes with it with a brush or just dunk them into the glaze head first (this is how I did it). And easy as that, the little sweet things are finished!

Was sind eure Lieblingsrezepte :)?

Unfortunately they are gone soooo fast, too! After only one evening, all of them except for those for my taster were gone.

Have you ever made such miniature Bundt cakes before? Which are your favourite recipes :)?
