A while ago I met up with some friends for a movie night since a friend who's living farther away by now was back home again for a chance. Of course we had to use that opportunity, and so almost our whole group of friends came together. And for a movie night you need some tasty snacks, of course!

Since another friend had already volunteered to bake a cake, I decided to do something salty and again returned to the Lecker Bakery no. 2 - as you know by now, my favourite of the Bakery magazines. This time, I chose the cheese squares with poppy seeds and sesame seeds. They turned out fabulously tasty and were a hit with my friends - I think we hadn't even started the movie yet when the bowl was empty *cough* ... The only catch: I can only bake them again if M2 isn't around. She wasn't that keen on the smell of the gruyère hanging in our whole flat ;) ... But maybe that could be helped by choosing a slightly milder chese. I can imagine they would also taste good using some cave-ripened cheese!

Mohn-Sesam-Käsewürfel

Zutaten:

100 g Gruyère (Stück)
25 g Parmesan (Stück)
125 g Mehl
1/2 TL Backpulver
125 g kalte Butter
2-3 EL Mohn
2-3 EL Sesam
etwas Wasser

Cheese squares with poppy and sesame seeds

Ingredients:

100 g Gruyère cheese (piece)
25 g parmesan (piece)
125 g flour
1/2 tsp baking powder
125 g cold butter
2-3 table spoons poppy seeds
2-3 table spoons sesame seeds
a bit of water

Grate the Gruyère and parmesan cheese very finely. In a bowl, mix flour and baking powder and add in the cheese and butter in chunks. Knead into a smooth dough using the kneading hook of your hand or stand mixer first, then your hands. Cover the bowl and chill in the fridge for about 30 minutes.

Divide the dough in half. Shape each half on a floured surface first into a roll (with a length of about 35 cm) and then into a square bar using a ruler. Brush with some water and roll one bar in the poppy seeds and the other in the sesame seed. Lightly press the seeds into the dough and chill the dough again for about 1 hour.

Preheat the oven to 200°C. Line two baking sheets with parchment paper. Cut the bars in disks wuth a thickness of 1 cm and place on the baking sheets. Bake the first one 8-10 minutes. Pull the parchment paper with the cheese squares from the baking sheet and let cool. Bake the second sheet the same way.

After-Eight-Minigugl {Ich back's mir}

Do you still remember last year's miniature Bundt cake craze? For a while, those little cakes were everywhere on all kind of blogs :) ... I was infected with it, too, and took out my miniature Bundt cake pan I had owned for a while. They are just so sweet and tiny and thanks to their size, they don't need a lot of ingredients, so they're easy to bake when there isn't a lot in the pantry. Nevertheless, there's only one miniature Bundt cake recipe on my blog so far - that needs to be changed!

So I used the opportunity of the blog project by Clara of Tastesheriff. Similar to Ina of Whatinaloves who's got the blog project "Let's cook together", Clara's blog project is called "Ich back's mir" (roughly translating to I am baking it the way I like it). And this month's topic is Bundt cakes. Luckily she didn't specify which size they need to be ;).

These mini Bundt cakes were quite an experiment - originally I had wanted to do a tested and tried recipe for chocolate coconut Bundt cakes to bring some to my parents but then I thought it would be nice to have a few left over for a friend who spent Tuesday evening with us. But he doesn't like coconut ... So I just turned the recipe into After Eight Bundt cakes using the peppermint flavour I had in my baking drawer. But I had misjudged how strong the flavour is, and when the batter first tasted like toothpaste, I had to double the recipe and finally ended with four times the batter (!). We still managed to eat them all :). So please be very careful with the peppermint flavour!

Unfortunately, I ended up having the same problem I had wanted to avoid by changing the recipe up: My mama doesn't like After Eight, and so she wasn't a fan of those. She ate a few and found them okay but she'd have preferred coconut. Damned if you do, damned if you don't :) ...

After-Eight-Minigugl
(für 15 Stück)

Zutaten:
30 g Puderzucker
35 g Butter
1 Ei
50 g Mehl
1 Prise Salz
60 ml Milch
1 TL Kakaopulver
1 Tropfen Pfefferminzaroma

Miniature After Eight Bundt cakes
(15 pieces)

Ingredients:
30 g confectioner's sugar
35 g butter
1 egg
50 g flour
1 pinch of salt
60 ml milk
1 tea spoon cocoa powder
1 drop of peppermint flavour
100 g plain chocolate

Preheat the oven to 175°C. Using a handheld mixer or kitchen machine, beat together all ingredients apart from the chocolate. Fill the batter into the miniature Bundt cake pan. It works best when you fill it into a freezer bag and cut off a corner. Then "pipe" the batter into the pan.

Bake for approx. 20 minutes. Take out of the oven, let cool and release the Bundt cakes from the pan. In the meantime, chop the chocolate and melt it in a double boiler. Cover the Bundt cakes with chocolate (my experience was that it worked best first dipping them into the chocolate and then taking off some of the excess chocolate with a pastry brush). Let the chocolate set. That's all - enjoy!

What's your favourite Bundt cake recipe? If you don't have one, I'm sure you could find one that you love here :).

Last week my friends and I met again for roleplaying. And as usual, while we were talking about the date and such, I immediately had to ask: "Oooh, so we're meeting, should I bake something? What would you like, how about this or that, or do you have any wishes?" My poor friends - but so far they're good sports about it :).

This time they decided they'd like some cookues, with dark chocolate and something fruity. I immediately got the idea to combine dark chocolate with raspberries ... Unfortunately I had to find that despite dozens of cookie recipes online, no one else had had the same idea. All recipes just paired raspberries with white chocolate! So I finally though, what you gotta do, just make one up yourself. Of course this meant that I had to bake the cookies once for practice to see if they turn out how I wanted them to. A sacrifice M2 and me were happy to make :)!

The first try turned out quite well, and so the second try, with some minor adjustments, resulted in this recipe:

Chocolate cookies mit Himbeeren
(basierend auf einem Cookies-Grundrezept von lecker.de)

Zutaten:
125 g Butter
175 g Zucker
1 Prise Salz
1 Ei
1 Pk. Vanillezucker
200 g Mehl
1 TL Backpulver

Guten Appetit!

Chocolate cookies with raspberries

Ingredients:
125 g butter
175 g sugar
1 pinch of salt
1 egg
1 package of vanilla sugar
200 g flour
1 tea spoon baking powder
2 tablespoon cocoa powder
100 g plain chocolate
150 g raspberries (fresh or frozen)

Preheat the oven to 175°C. If you use fresh raspberries, wash them. If you use frozen, best let them defrost in a sieve so they do not get quite as squishy.

Chop the chocolate and let it melt in a double boiler. In the meantime, beat butter and sugar until fluffy and stir in the egg, then add the melted chocolate.

Mix salt, flour, baking powder, sugar, vanilla sugar and cocoa powder and stir into the wet ingredients bit by bit. Finally add the raspberries (do not stir too much to avoid squishing them). Line two baking sheets with parchment paper. Use two tea spoons or an ice cream scoop to scoop small batches of the dough and place them on the baking sheets. Bake for approx. 15 minutes on the middle rack.

Enjoy!

I admit I wouldn't have minded them being even more chocolatey but they were very soft and fluffy but still had some bite. So I think they're a success!

Do you like your raspberry cookies with white chocolate, too, or would this dark variety be something for you, too?

Uh-oh, it's been a while since my last post again! No, this time it wasn't my computer's fault, I just was very stressed and didn't have time for anything, which includes blogging :(. Unfortunately, there are times like that, and since I'm very bad at planning and preparing things, I didn't have anything I could post "just like that". This also meant that my blog's first birthday wasn't celebrated at all. But I hope it will be better now, and maybe I'll think of something really great to do for my second blog birthday ;).

In the meantime, it was time for Post aus meiner Küche (Mail from my kitchen) again! Of course I took part in that - and since I'm trying to blog the PAMK stuff within a short time (I'm not good at that either - you don't want to know about what I've still got lying around in my blog folder, waiting patiently to be posted!), I can show you some great recipes for Christmas cookies in time for Christmas! The theme for this round was "Lasst uns froh und lecker sein" (Let's be merry and tasty), and I can tell you that every time I read it, I was running around humming Christmas songs for the next few hours! I had been looking forward to this round a lot since it was last year's Christmas round that I first heard of PAMK. So things are coming full circle!

My swap partner was Marissa who has the writer's blog Marissa Conrady. I received wonderful coconur cookies and fragrant Christmas coffee from her. And this is what I sent to her:

These honey cookies were tried and tested in our last Christmas baking season already. They are very crunchy and wonderfully flavourful, thanks to the honey and gingerbread spice on the dough! You can also make holes into them prior to baking using a straw and use them to decorate your house :).

Another favourite from last year: Red currant hearts. This one is quite a lot of work, actually, because of the heart frames, but it's definitely worth it! If you're feeling lazy, you can also just cut out the same number of same shapes and glue them together with the red currant jam - that's what we always do with the leftover dough or if some of the heart frames have broken.

These coconut balls are very fast and easy to make, so if you're sick of the whole cutting shapes and decorating each cookie individually, this one is for you! I made two batches of these - they are always fast to go in our household :)!

And finally, I made chocolate meringues. They are my personal happy surprise in this round - it was the only recipe I hadn't tested the year before, and I only made them because there was egg white left over from the coconut balls. Quite frankly, I hadn't been a fan of meringue ... However, I now know that I was wrong, thanks to these! They didn't turn out quite so pretty because the egg whites didn't want to be as stiff as needed to pipe decorative little clouds of fluff but turned into flat circles ... But they still tasted great with the lovely chocolate nougat glaze! (I only hope that they arrive somewhat whole at Marissa's, because they are unfortunately a bit on the fragile side ...)

I kept the packaging rather simple since I somehow didn't have anything really Christmas-like in my stash. White and black and a bit of colour in the ribbons and twine looks nice and festive, too, though. The boxes and cups as well as the homemade stickers and brown stars are from Kukuwaja
. (Fortunately the delivery arrived in time - I had neglected making an order for a bit too long again ...)

Was sind eure Lieblingssorten?

Like the last time, I prepared the recipes for you as a PDF for download so this post won't be that long. You can download the English version HERE!

The recipes are all from a Weight Watchers book called "Weihnachtsbäckerei". Don't be afraid - you don't have to be on a diet to enjoy these cookies :)!

And now I feel like spending the rest of the day in my kitchen to bake another batch of cookies. Too bad I don't have everything I need ... But I hope I'll be able to have another cookies baking session next weekend.

Did you bake any Christmas cookies already this year (with or without PAMK)? What are your favourites?

[Let them eat cake] Apfel-Zimt-Schnecken

Keks unterwegs

So, the blog hiatus hereby is over! After some work, a lot of cursing and one or the other tear of despair (yes, I'm a bit melodramatic), my computer is working again like it should, and I can blog again. Yay!

In honour of the occasion, let's have a recipe again! We didn't have one of those for quite some time ... I made these small, sweet apple rolls a while ago on a Sunday afternoon, just because I felt like it and we still had some yeast that had to be used. Since it was a spontaneous decision, I had to work with what I had at home - so I used only three small apples instead of the four medium-sized ones the recipe demanded, and I also left out the Calvados the recipe wanted (but well, the recipe had forgotten to list it in the ingredients as well ;) ...). It still all worked out and tasted great!

This is also the first time I'm taking part in a blog event: Persis of Ein Keks für unterwegs is looking for recipes all around apples. I found the event on another blog and I'm happy I can take part! Fortunately the laptop was repaired in time for the deadline ;) ...

Und hier kommt das Rezept:

Apfel-Zimt-Schnecken

Zutaten
240 g Weizenmehl
20 g Hefe
4 EL Zucker
1 TL Vanillezucker
1 Prise Salz
50 g Margarine (oder Butter)
1 Ei
65 ml Milch
4 Äpfel
1 1/2 TL Zimt

And here is the recipe:

Apple-cinnamon rolls

Ingredients
240 g flour
20 g yeast
4 table spoons sugar
1 tea spoon vanilla sugar
1 pinch of salt
50 g margarine (or butter)
1 egg
65 ml milk
4 apples
1 1/2 tea spoons cinnamon
zest of 1 lemon
1 table spoon lemon juice

Heat the milk apart from two table spoons in a saucepan until it's lukewarm. Stir in a pinch of sugar and the yeast until well dissolved.

Mix the flour, 1 1/2 table spoons sugar, the vanilla sugar and salt. Melt the margarine and stir into the flour mixture together with the egg. Add the yeast milk and knead until you get a smooth dough. Cover the dough and let it rest for approx. 30 minutes in a warm place.

Preheat the oven to 180°C. For the filling, cut the apples in fine cubes and stew for approx. 4 minutes with the rest of the sugar, cinnamon, lemon cest and lemon juice at medium heat.

Knead the dough well another time, roll out in a rectangle, spread the apple filling on it and roll it up from the shorter side. Cut into 12 slices, place on a baking sheet lined with parchment paper and let rest for another 20 minutes. Brush with the remaining milk and bake on the middle rack for about 20 minutes. Let cool and serve fresh if possible.

Was backt ihr gern, wenn ihr am Sonntag Nachmittag Lust auf was Süßes habt? Oder was sind eure Lieblings-Apfelrezepte?

What do you bake when you want something sweet on a Sunday afternoon? And what are your favourite apple recipes?

I am back from vacation, bringing back lots of lovely pictures and memories (and a few pounds more) - it was wonderful but much too short! Everyday life is back with a vengance again, too ... But that's life. Let's talk about something nice instead :).

Shortly before I left for my vacation, the second round of Post aus meiner Küche (Mail from my kitchen) took place, which was also the second time I took part. The theme for this round was "Zusammen schmeckt es besser!" (Everything tastes better when you share it. My swap partner was Dani who writes the blog Fabulous Food. And since everything tastes better when you share it, the girls organising PAMK had the nice idea to look for swap partners that live nearby so that we could hand over the parcels personally and even enjoy them together. Therefore, I went to Stuttgart one Sunday, feeling rather excited and bearing a parcel with my home-made goods, to meet Dani and her boyfriend. Unfortunately, the weather was quite bad so we couldn't sit in a park but we also enjoyed spending over two hours in a café, talking and getting to know each other. And both the parcel and its recipient got home safely afterwards.

The theme made me think a lot. I started with the question: "What do I like to share with others?" I didn't get far with that, and when I told M2 about it, she only said: "Everything?" Well, that was the problem ... So I went looking for a different approach and decided to concentrate on when you like to share something with others. And so I found the concept for my parcel!

And this is what I packed into it in the end:
  • Apple Pie Pops - for confidential talks with your best friend
  • Rosemary and Thyme Crackers and Tomato Feta Dip - for enjoying the evening with your friends
  • Strawberry Hearts - for being with your love
  • Zucchini Sheet Cake - for coffee and cake with your family

The apple pie pops are a recipe from the latest Lecker Bakery and caught my eye immediately. I thought that something that isn't much work but still has something special was perfect for meeting your best friend . Mostly, I followed the recipe closely - however, I changed the way of doing the "cover" of the pies. The Lecker Bakery suggested cutting some cute shapes from it (which is necessary to avoid the pies puffing up while baking). I didn't really manage to do that in an attractive way, and so I decided to go for a lattice pattern instead. I now like my solution much better! Other than that, the recipe is great, the crisp cinnamon crust is wonderful.

The rosemary and thyme cracker are from the Lecker Bakery 3, a recipe I had been itching to try for a while. They are very easy and quick to do - I only found them a bit dry on their own which is why I spontaneously decided to add the tomato feta dip. That one is even easier and quicker and tastes great on bread, too. Perfect for watching some movies with your friends, for example!

For time spent with your love, I wanted to have something romantic - so the recipe for strawberry hearts, again from the Lecker Bakery 4, was perfect. I didn't really get the heart shape to work, perhaps because I used a bit too much jam, but they tasted great nevertheless. Since the puff pastry is store-bought, it's again a rather easy, uncomplicated recipe.

And finally, there was the one thing I immediately thought of in answer to the question "What do I like to share" - this cake is very popular in my family, and they often ask me to bring it when we meet. My sister-in-law in particular loves it - without chocolate, though, since the poor girl can't have chocolate. I got the recipe from a fellow student at university - I got to know this cake in the very easy version for lazy people: no chocolate covering but just a jar of Nutella and a knife ...

If you bake it for someone who doesn't know it yet, it can be advisable not to tell them about the main ingredients since some people do not like the thought of vegetables in their cake ... You can't really taste the zucchini, though, but it makes the cake very moist so that it keeps very well for several days. So it's great if the family comes to visit and you have a lot of stuff to do!

Since I'm rather late with my post about this PAMK round (it's been almost a month!), I decided that I don't want to show you the recipes bit by bit in several posts - but all of them in one post would make it incredibly long. So I made a PDF with the recipes instead that you can download. It's not very sophisticated from a graphic design point of view but I hope you like it nevertheless!

Dani gave me a wonderful parcel herself, with pizza rolls, ham and zucchini muffins, cookies and lemon muffins. Unfortunately, the picture I took is a bit fuzzy - I guess I was too impatient to finally try it! But everything tasted wonderful :).

With the two recipes from the Lecker Bakery 4, I again join Maria of Ich bin dann mal kurz in der Küche who collects the recipes from the Lecker Bakery here, just in time.

Did you take part in PAMK this time? And which are the things or events you love to share with others?

[Let them eat cake] Brownies mit Honignüssen

Was soll ich sagen?

Did you hear about the new Lecker Bakery yet? It came out three weeks ago, and while I didn't stand in front of the newspaper kiosk in the morning, I still had to have it on the same day :). And the next day I made one of the recipes in it! Originally I had first wanted to do the red currant pull-apart cake, but that didn't happen because there were no red currants to be had. So instead, I made lucious chocolatey brownies.

What can I say? Brownies are always awesome, and these were no exception. Topped with tasty honey hazelnuts and lot of chocolate, yum! Definitely a recipe asking to be made again!

Brownies mit Honignüssen

Zutaten
250 g Butter
400 g Zartbitterkuvertüre
200 g Zucker
200 g gemahlene Haselnüsse
1 1/2 TL Backpulver
7 Eier

Brownies with honey nuts

Ingredients
250 g butter
400 g plain chocolate
200 g sugar
200 g ground hazelnuts
1 1/2 tea spoons baking powder
7 eggs
100 g hazelnuts
2  table spoons liquid honey

Grease a square or round Springform pan (24x24 cm or 26 cm in diameter). Preheat the oven to 175°C.

Chop 300 g of the chocolate and melt in a bain maire with the butter. Remove from the heat and stir in the sugar. Mix ground hazelnuts and baking powder and mix into the chocolate dough. Stir in the eggs one after the other. Pour the dough into the pan and smooth out. Bake approx. 30 minutes, remove from the oven and let cool.

Chop the hazelnuts roughly and roast in a pan without any fat. Remove from the heat and mix with the honey. Melt the remaining chocolate in the bain maire. Remove the brownies from the baking pan and cut into cubes. Spread the honey nuts on them and drizzle the chocolate over them. Let dry until the chocolate has hardened.

Welche Rezepte machen euch besonders an?

By the way, Maria from Ich bin dann mal kurz in der Küche is collecting the recipes from the Lecker Bakery again like she did the last time - and this time, she even got some prizes from the Lecker staff! If you want to take part, you can send pictures and blog links to Maria until 25 August. We'll see if I manage to bake something else until then and blog about it :) ... (The red currant pull-apart cake I made a few days later, by the way, but due to ... stuff, it didn't make it on any pictures worth blogging.)

So, did you get the Lecker Bakery yet? Which recipes make your mouth water the most?

Lasst uns picknicken!

A short while ago, my parents and I went on a short biking trip along the Glems-Mühlen bycicle route which happens to be close to where I live. And after I had recently seen a lot of picknick ideas appear in several blogs, I really wanted to prepare a picknick for us. Fortunately, my parents didn't protest much ;) ... And so I prepared a colourful picknick with some hearty food, something sweet and some fruit.

Unfortunately, we ate a big part of the picknick at our living room table in the end ... My parents got lost on the way to our house and arrived so late that we were all starving and needed some food right away. The rest we ate on a bench along the road, though, and even at the living room table it all tasted great, naturally.

On the menu were tartelettes with tomatos and feta, puff pastries with ham and cheese and rhubarb muffins, and we also had some fresh watermelon.

The recipe for the tartelettes I found on In's blog Whatinaloves, the recipe for the rhubarb muffins was from Zimtkeks und Apfeltarte. I didn't really change anything about them (except for one thing but that wasn't intended at all, haha), so I'm just linking to the respective blog posts (German only, sorry).

With the tartelettes, I found out that Ina seems to have bigger tartelette pans than I do - she wrote in her recipe that it's for 5-6 tartelettes but I made eight tartelettes plus four small quiches formed freehand (I only have eight tartelette pans). That didn't matter, though, so we had the four little quiches for dinner the night before, and I could leave two tartelettes to M2 but it was still enough for us. I slices the cherry tomatoes in half since they were rather big and would have stuck out too much otherwise. I can only say it's a really delicious und uncomplicated recipe!

For the rhubarb streusel muffins, I used rhubarb for the last time this year but I can imagine they would taste great with other fruit, such as cherries, for example, too! The streusel were very tasty, very crispy and with a nice vanilla taste.

And the dough surely would be great if you don't forget to add eggs, like I did *cough*. Yeah, my scatterbraininess (is that even a word?) has struck again. It was good like that, too, only a bit heavy and firm - that's why there are pastry forks there on the picture, without them the muffins were unfortunately a bit difficult to eat ...

Guten Appetit!

As you can see, a lot went wrong when I prepared it - again ... That's also the case with these puff pastries, they shouldn't have turned out quite so dark ... But that didn't affect their great taste, and since they are extremely easy and fast to make, I didn't want to keep the recipe for myself.

Puff pastries with ham and cheese

Ingredients
1 package of puff pastry from the supermarket
8 slices of ham (if the slices are big, you can take 4 and slice them in half)
4 slices of cheese (I used gouda)
1 egg
some milk

Unwrap the puff pastry and unroll it. Depending on the size and shape of the pastries, cut it into pieces - mine were rectangles which is easiest. Whisk the egg with some milk and brush the edges of the pastries with it. Cut the cheese slices in half (and also the ham if your slices are big) and place cheese and ham on one half of the dough. Fold the other half over and pinch the edges slightly. Brush the pastries with the egg-milk mixture.

Bake the pastries in the oven as indicated on the puff pastry package - and maybe check on them a few times in-between so you won't suffer the same fate I did ;). Enjoy!

Despite the slip-ups (I'm used to them, after all) I enjoyed preparing our little picknick, and I hope I'll get another opportunity at making one! Admittedly, we're little homebodies, so it doesn't come up too often.

How about you, do you have picknicks sometimes, too? What do you think is an absolute must for it?
